This category is doing something more interesting than "other Asian food". Chiang Mai province shares a border with Myanmar, and the city was for centuries the southern end of a trade route running down from Yunnan — so Chinese and Burmese cooking are not imports here, they are local history. The Yunnanese Haw communities that brought khao soi also brought their own noodles, steamed breads and braises, and the Shan population that moves back and forth across the border keeps a distinct cuisine present in the city's markets.

On top of that sits a genuinely modern layer. Chiang Mai has supported a Japanese expatriate community for decades and a large remote-working population for one, and the result is a ramen, sushi and izakaya scene that would be disproportionate for a Thai city of this size. Korean barbecue and fried chicken arrived with the same wave. The Chinese restaurants split cleanly between the old Yunnanese kitchens and newer Cantonese and Sichuan rooms aimed at visitors from the mainland.

It is the second-largest category on the site and the price spread inside it is the widest of any — from single-dish noodle counters to hotel dining rooms — so the label tells you the kitchen's origin and almost nothing about the evening.
