The MICHELIN Guide Thailand 2026 lists 54 restaurants in Chiang Mai: 18 Bib Gourmands, 36 Selected and no stars. The guide's "Chiang Mai" includes the surrounding districts — Mae Rim, San Sai, Saraphi, Hang Dong and San Kamphaeng — so 15 of the 54 are a drive out of town. The gap between the guide and the rankings

  1. 51 of 54 MICHELIN picks appear in neither ranked set we hold — not among the 139 Chiang Mai restaurants with a Google rating in our capture, and not among the 79 with a TripAdvisor rank.
  2. 0 of the 9 restaurants rated 4.8★ or better with 500+ Google reviews carry a guide listing.
  3. 0 of the TripAdvisor top 20 are MICHELIN-listed.

These kitchens are not unreviewed — many have plenty of Google reviews. They are unranked: they do not surface in the English-language "best restaurants in Chiang Mai" lists both platforms show visitors, which reward places that are searched for in English and reviewed by tourists. So the absence is a fact about the rankings, not about the food. The rankings answer "where will I have a good meal with a menu I can read"; the guide answers "what is this city good at". Use both.

What Bib Gourmand and Selected mean

The Bib Gourmand is the guide's value award: good cooking at a moderate price, with the price threshold set per country. It is a separate judgement, not a near-miss star. Selected (36 entries here) means the inspectors recommend the restaurant without a star or a Bib. In Chiang Mai the Selected list is where the contemporary tasting menus, the hotel and garden rooms and the out-of-town Northern kitchens sit; the Bib list is mostly shophouses, noodle shops and street stalls.

The list, grouped by what they cook

The noodle bowl · 6 of 54

Chiang Mai's most famous dish is a bowl of noodles with roots outside Thailand. Khao soi is generally traced to the Chin Haw — Yunnanese Muslim caravan traders who moved goods through the Shan states of Burma into the North — and it still tastes of that route: soft egg noodles in a coconut-curry broth built on turmeric and dried chilli, a nest of the same noodles fried crisp on top, and a saucer of pickled mustard greens, sliced shallot and lime to cut through it. The pickles are not a garnish.

The other bowls in this group are the ones locals eat between khao soi sittings. Kanom jeen is fermented rice vermicelli drowned in whichever curry the shop is known for — in the North that often means nam ngiao, a tomato-and-pork-rib broth thickened with dried kapok flower, a Shan inheritance you rarely meet in Bangkok. Guay jub is the Chinese-Thai outlier: rolled rice-noodle sheets in a peppery broth with pork offal and egg.

The Lanna table · 15 of 54

The North was the Lanna kingdom, a Siamese tributary state rather than a province until around the turn of the twentieth century, and the food still shows it. The Lanna kitchen runs on sticky rice, uses far less coconut milk than the South, leans bitter and herbal where Bangkok leans sweet, and carries a Burmese and Shan accent the rest of Thailand does not have.

What lands on the table: sai ua, the coiled grilled sausage packed with lemongrass, galangal, kaffir lime leaf and dried chilli; gaeng hang le, a pork-belly curry of Burmese descent built on ginger, tamarind and garlic with no coconut milk at all; nam prik num, roasted green chillies pounded into a smoky dip, and nam prik ong, its tomato-and-minced-pork cousin — both eaten with sticky rice, raw and blanched vegetables and crisp pork rind. 15 of the 54 entries carry the guide's "Northern Thai" label, more than any other.

It is also the part of the list least likely to have an English menu, and the part most worth the trouble. Our Northern Thai guide adds the places the crowd rates highest.

The one-dish masters · 4 of 54

The most reliable signal in Thai eating is a shop that sells one thing. The guide files 4 such places under "Street Food" or "Small eats".

Khao man gai is the Thai reading of Hainanese chicken rice: poached chicken, rice cooked in the broth with garlic and ginger, and a fermented-soybean, ginger and chilli sauce that is the whole argument. Roti is the evening dish: dough stretched and griddled, folded around banana and egg, finished with condensed milk and sold from a cart to people who have already had dinner.

A one-dish shop has nowhere to hide, which is why it suits an inspector's visit and why these places tend to sell out rather than close on a schedule.

16 entries carry a plain regional label — "Thai", "Southern Thai", "South East Asian" — and this is the group where the guide's shorthand says least: it covers a shophouse kitchen doing four curries and a garden restaurant growing its own herbs with equal indifference. The modern and international rooms · 13 of 54

13 entries are doing something other than tradition: contemporary Thai tasting menus, "Creative" and "Innovative" kitchens, and the city's Italian, Chinese, seafood and vegetarian rooms. Almost all of them hold the Selected distinction rather than a Bib Gourmand, and they are the entries on the list where booking ahead is normal rather than eccentric.

Corrections: no longer in the guide

Until 2 October 2026 this page listed 37 restaurants and called 32 of them Bib Gourmands. That list was out of date and partly wrong. Checked entry by entry against the guide: five of our "Bibs" are Selected (Aunt Aoy Kitchen, Baan Landai Fine Thai Cuisine, Busarin Cuisine, Ekchan, Maadae Slowfish Kitchen), and these 13 are not in the MICHELIN Guide Thailand 2026 at all: Charoen Suan Aek, Ginger Farm Kitchen, Go Neng (Wichayanon), Han Thueng Chiang Mai, Khao Soi Lung Prakit Kad Kom, Khao Soi Mae Manee, Na Chantra, Rote Yiam Beef Noodle, SP Chicken, The House by Ginger, Tune In Garden, David's Kitchen, The Service 1921. Several held a Bib Gourmand in earlier editions, but we could not confirm which edition for each, so we no longer label any of them. Their old pages now point here. Every restaurant in our data rated 4.8★ or better on Google with at least 500 reviews. The last column is the point.

Not a criticism of either list. A restaurant can be excellent and hold no guide listing, and many of the ones above are.

How to use this list

Pick one family and go deep. The noodle bowl and the Lanna table will teach you more about Chiang Mai in four days than four scattered reservations.

Plan the out-of-town entries as trips. 15 of the 54 are outside the city district, typically a 20–40 minute drive.

Check the hours before you cross town. We publish the guide's address and price level but never opening hours, which change too often to copy; every restaurant page links to Google Maps, which carries the current ones. Shophouse and noodle Bibs in particular often close when the pot is empty.
